STROMBOLI How to make the rolled pizza

Stromboli is not only a volcano in Italy but also the name for a filled pizza roll that is perfect to serve as a snack. We show how to make the recipe.
Stuffed pizza in the form of a calzone we all know. But have you ever tried Stromboli? This is a rolled pizza that is served in pieces - making it perfect as finger food!

Stromboli: These are the ingredients you need
For the dough:
  • 250 grams of flour (type 550)
  • ½ cube yeast
  • ½ teaspoon sugar
  • 4 tablespoons + 120 ml lukewarm water
  • 1 tsp salt
  • 1 tbsp olive oil
  • Flour for the work surface
For the filling:

  • 200 g tomato sauce (e.g. this pizza sauce).
  • 100 g cooked ham
  • 150 g grated cheese
  • olives (pitted and chopped)

Preparation of Stromboli pizza
Put the flour in a bowl and make a well in it. Add crumbled yeast, sugar, and 4 tablespoons of lukewarm water to the well, mix lightly and let rise, covered, in a warm place for about 20 minutes.
Add 1 tsp. salt, 1 tbsp. oil and 120 ml lukewarm water and knead everything with the dough hook of the hand mixer or in a food processor until a smooth dough is formed.
Then knead the dough vigorously on a floured work surface for about 10 minutes, also beating the dough on the work surface and pulling it long.
Shape the dough into a ball, place in a bowl and let rise, covered, in a warm place for at least 2 hours until the dough has doubled in volume.
Preheat the oven to 230 °C (fan oven 210 °C, gas mark 5-6).
Briefly knead the pizza dough again and roll out into a rectangle (approx. 20x30 cm) on a floured work surface. Spread the tomato sauce evenly on top, leaving a little space around the edges. Sprinkle the Stromboli pizza with cooked ham, cheese, olives, and other ingredients of your choice.

Fold the edge of the dough over the filling on the short side to prevent it from spilling later. Now roll up the pizza from the long side and press down the edge at the end.
Place the dough roll on a baking sheet lined with baking paper, score the surface with a knife, and sprinkle cheese or dried herbs such as oregano over it if desired.
Bake the Stromboli pizza in the preheated oven for about 20 minutes, until golden brown. Cut into slices before serving.

Tip: How to modify the recipe
Of course, you can vary the pizza according to your wishes: If you want to make it vegetarian, you can use zucchini, peppers, or mushrooms as a filling. Instead of ham, you can choose salami, and when it comes to cheese, you have the choice between rather tasteless varieties such as mozzarella or spicy varieties such as cheddar. If you're in a hurry, you can also use ready-made pizza dough for the Stromboli roll - although it tastes better homemade, it also takes much longer to prepare. Have fun trying it out!
