TARTIFLETTE Heavenly potato casserole French style

Tartiflette is a French potato casserole with onions and bacon topped with spicy Reblochon cheese - a dream come true!
Ingredients for 4 servings:
  • 1.2 kg potatoes (mainly waxy)
  • 2 small onions
  • 1 tablespoon oil
  • 200 g diced bacon
  • 75 ml white wine
  • 4 tablespoons crème fraîche
  • salt, pepper
  • butter for greasing
  • 350 g Reblochon cheese
  • Parsley
Preparation time: 75 minutes

Preparation of the tartiflette:
Place the potatoes in a pot of cold water and cook over medium heat for about 15 minutes. In the meantime, peel and finely dice the onions.
Drain the potatoes, let them cool briefly and peel them, then cut them into slices.
Heat the oil in a pan and sauté the onions together with the bacon cubes. Pour in white wine and simmer until the wine has evaporated.
Stir the crème fraîche into the onion-bacon mixture and season with salt and pepper.
Preheat the oven to 200 °C top/bottom heat.
Grease a baking dish with butter, spread half of the potato slices on the bottom, and season lightly with salt and pepper. Now spread half of the onion-bacon cream on top. Add another layer of potatoes and the remaining onion mixture on top.
Halve or slice the cheese and place it on top of the potato casserole. Bake the tartiflette in the preheated oven for about 35 minutes. Sprinkle with chopped parsley if desired and serve. 

Tips for your tartiflette
Reblochon is usually available at the cheese counter in the supermarket, but you can also use another soft cheese such as Camembert as an alternative. The important thing is that it is nice and creamy and melts well. If you want to make the potato casserole vegetarian, replace the bacon with smoked tofu - it also tastes nice and spicy. In some recipes, the white wine or crème fraîche is omitted, so you can modify the tartiflette to your taste. Since the casserole is very rich, a light leaf salad is suitable as a side dish, also, a glass of French white wine with the meal may not be missing of course!
